About MMQ
MMQ is a Windows program for meat colour, marbling and intramuscular fat (IMF). Its English name is Multifunctional Meat Quality Determination Software. The window title identifies Version 1, © 2025 by NJAU (Nanjing Agricultural University).
Pork is eaten widely, and its colour and eating quality matter to buyers. Intramuscular fat is one of the traits that affects pork flavour. Laboratory fat extraction, such as Soxhlet extraction, is done after slaughter and does not give breeders a quick measurement they can use while selecting stock. The desktop program is meant to score colour, marbling and IMF in one workflow.
The people named in the software manual are Ji Qiunan, Liu Zedan, Wan Ziming, Zhao Sanqin and Wu Wangjun. The stated user is an enterprise.

Desktop program and PorkMS
Two tools are documented here. They both look at meat cross-sections, and they do not share one score scale.
| Tool | Where it runs | What it reports |
|---|---|---|
| MMQ | Windows desktop | L*, a*, b*, a meat-colour score, a marbling score and IMF. The information table labels the colour and marbling scores as NPPC 6-point scores. The default model is NPPC. |
| PorkMS | Web browser | Fat area ratio and a marbling grade from 1 to 10+. No account is required. Analysis stays in the browser. |
Do not copy an NPPC 6-point score into a PorkMS grade, or the reverse. Read the page for the program you are actually using.
